Mexican Caviar by Janene Hansen

3 Ripe avocados

3 Limes

1 pkg Good Seasons Italian dressing dry mix

1 can White corn

1 can Black beans

1 bunch Cilantro

Green onions

Mix Good Seasons Italian dressing dry mix with the juice of 3 limes and set aside. Drain and rinse corn and black beans. Peel and remove seed of the avocados and chop in small pieces (do not mash them). Slice green onions and chop cilantro. Depending on how well you like cilantro, you can use ½ cup or more. I use about ¼ of a cup so its flavor isn’t predominant. Mix all the ingredients together and fold in dressing. I also use grated onions for those who do not like the crunch of raw onions but like the flavor.

You can also use some chopped tomatoes if you choose. I would use Roma tomatoes and extract the seeds and juicy part so it doesn’t make the dish too runny.
